Happy WIAW! It is another chilly but beautiful day in the city and I thought it was perfect for a super tasty superfood recipe. This time of year I find my eating habits to be less than ideal because it’s cold, and I just want comfort! Well, I’ve found clean comfort with this recipe. The chia seeds leave you full and the cinnamon and chai spices warm you up. This recipe is great for a bedtime snack or for a light breakfast.

Chilly Ch-ch-chia Pudding

Serves 1 (Gluten-free, Vegan, Paleo)

1/4 cup unsweetened apple sauce
1/2 scoop VEGA Vanilla Chai Protein
1/2 tbsp chia seeds
Approximately 4 tbs water (add more or less water depending on how thick you’d like your pudding)
Dash of Pumpkin Pie Spice, optional

Directions: Combine all of the ingredients thoroughly and allow the chia to expand and thicken in the refrigerator for 10 minutes. Once the mixture is set, dig in and feast on this healthy omega-3 and protein-rich dessert. Eat clean, eat happy.

    • I know, girl!! It’s been a day of Starbucks shakes, coffee and lots of fruit… Not very pretty but I’m snapping photos and will post them ASAP:) Thanks again for creating this… I love Wednesdays.
